For the Churro Bites:

  • 1 cup whole wheat pastry flour (or all-purpose flour)

  • 1 tbsp coconut sugar (or brown sugar)

  • ½ tsp baking powder

  • ¼ tsp salt

  • ⅔ cup unsweetened almond milk (or any milk of choice)

  • 1 large egg

  • 1 tsp pure vanilla extract

  • 1 tbsp melted coconut oil

For the Cinnamon-Sugar Coating:

 

  • 2 tbsp coconut sugar (or regular sugar)

  • 1 tsp ground cinnamon


Instructions

  • Preheat the air fryer to 375°F (190°C).

  • In a small bowl, mix together coconut sugar and cinnamon for the coating. Set aside.

  • In a medium bowl, whisk together the flour, coconut sugar, baking powder, and salt.

  • In another bowl, combine the almond milk, egg, vanilla extract, and melted coconut oil. Whisk until smooth.

  • Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix.

  • Cover the dough and refrigerate for 15 minutes to make it easier to handle.

  • Once chilled, roll the dough into 1-inch balls. Place them on a parchment-lined tray.

  • Lightly brush each dough ball with melted coconut oil for extra crispiness.

  • Place the dough balls in a single layer in the air fryer basket. Air fry at 375°F for 6-8 minutes, shaking halfway through.

  • Once golden and crispy, roll the warm churro bites in the cinnamon-sugar mixture.

  • Serve and enjoy!

Notes

  • Make sure not to overcrowd the air fryer basket. Cook in batches if necessary for even crispiness.

  • The dough should be soft and slightly sticky. Chilling it helps prevent sticking.

  • For a vegan version, use a flax egg and plant-based milk.
