Ingredients
For the Churro Bites:
-
1 cup whole wheat pastry flour (or all-purpose flour)
-
1 tbsp coconut sugar (or brown sugar)
-
½ tsp baking powder
-
¼ tsp salt
-
⅔ cup unsweetened almond milk (or any milk of choice)
-
1 large egg
-
1 tsp pure vanilla extract
-
1 tbsp melted coconut oil
For the Cinnamon-Sugar Coating:
-
2 tbsp coconut sugar (or regular sugar)
-
1 tsp ground cinnamon
Instructions
-
Preheat the air fryer to 375°F (190°C).
-
In a small bowl, mix together coconut sugar and cinnamon for the coating. Set aside.
-
In a medium bowl, whisk together the flour, coconut sugar, baking powder, and salt.
-
In another bowl, combine the almond milk, egg, vanilla extract, and melted coconut oil. Whisk until smooth.
-
Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix.
-
Cover the dough and refrigerate for 15 minutes to make it easier to handle.
-
Once chilled, roll the dough into 1-inch balls. Place them on a parchment-lined tray.
-
Lightly brush each dough ball with melted coconut oil for extra crispiness.
-
Place the dough balls in a single layer in the air fryer basket. Air fry at 375°F for 6-8 minutes, shaking halfway through.
-
Once golden and crispy, roll the warm churro bites in the cinnamon-sugar mixture.
-
Serve and enjoy!
Notes
-
Make sure not to overcrowd the air fryer basket. Cook in batches if necessary for even crispiness.
-
The dough should be soft and slightly sticky. Chilling it helps prevent sticking.
-
For a vegan version, use a flax egg and plant-based milk.
-
-
These churro bites are best enjoyed fresh but can be stored in an airtight container for up to 2 days.
