Ingredients
1 tablespoon olive oil
1 onion, diced
2 cloves garlic, minced
1 bell pepper, diced
2 carrots, diced
2 celery stalks, diced
1 zucchini, diced
1 can (15 oz) kidney beans, drained and rinsed
1 can (15 oz) black beans, drained and rinsed
1 can (28 oz) crushed tomatoes
2 cups vegetable broth
2 tablespoons chili powder
1 teaspoon cumin
Salt and pepper to taste
Fresh cilantro for garnish
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add onion and garlic, sauté until translucent.
3. Stir in bell pepper, carrots, and celery; cook for 5 minutes.
4. Add zucchini, beans, crushed tomatoes, vegetable broth, chili powder, and cumin.
5. Bring to a boil, then reduce heat and simmer for 30 minutes.
6. Season with salt and pepper to taste.
7. Serve hot, garnished with fresh cilantro.
