Ingredients

1 cup cornmeal

1 cup all-purpose flour

1/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup milk

2 large eggs

1/4 cup unsalted butter, melted

1/4 cup honey

1/2 cup corn kernels (fresh or frozen)


Instructions

1. Preheat your oven to 400 degrees F (200 degrees C).

2. In a large bowl, mix together the cornmeal, flour, sugar, baking powder, and salt.

3. In another bowl, whisk together the milk, eggs, melted butter, and honey.

4. Combine the wet ingredients with the dry ingredients until just mixed; fold in the corn kernels.

5. Spoon the batter into greased mini muffin tins, filling each cup about 2/3 full.

6. Bake for 15-18 minutes or until golden brown and a toothpick comes out clean.

7. While baking, prepare the honey butter by mixing softened butter with honey until smooth.
