Description
This gourmet honey chipotle bacon cheddar grilled cheese elevates the classic sandwich with sweet and spicy flavors, crispy bacon, and perfectly melted sharp cheddar cheese on artisan bread.
Ingredients
8 slices artisan sourdough bread
1 pound sharp cheddar cheese, sliced
8 strips thick-cut bacon
3 tablespoons chipotle peppers in adobo sauce, minced
2 tablespoons pure honey
4 tablespoons butter, softened
Optional: caramelized onions, fresh cilantro
Instructions
1. Cook bacon in cast-iron skillet over medium heat until golden and crisp, about 6-8 minutes. Drain on paper towels.
2. Mix minced chipotle peppers with honey to create honey chipotle sauce.
3. Spread softened butter on exterior sides of bread slices.
4. Layer sharp cheddar cheese generously on unbuttered side of 4 bread slices.
5. Add 2 strips of crispy bacon per sandwich.
6. Drizzle honey chipotle sauce over bacon and cheese.
7. Top with remaining bread slices, buttered side facing out.
8. Heat cast-iron skillet over medium-low heat.
9. Place sandwiches in skillet and cook 3-4 minutes until golden brown.
10. Gently press with spatula and flip carefully.
11. Cook additional 3-4 minutes until second side is golden and cheese is fully melted.
12. Remove from heat and let cool 1 minute before cutting diagonally.
Notes
For best results, use aged sharp cheddar for maximum flavor.
Adjust chipotle pepper amount to control spice level.
Medium-low heat prevents burning while ensuring proper cheese melting.
Can substitute brioche for sourdough bread.
Store leftover honey chipotle sauce in refrigerator for up to 1 week.
