34 lbs baby back ribs or spare ribs

1/4 cup soy sauce

2 tablespoons Jack Daniel’s Tennessee Honey whiskey

3 tablespoons honey

1 tablespoon fresh ginger, minced

2 tablespoons brown sugar

1 tablespoon garlic powder

1 tablespoon smoked paprika

1 teaspoon black pepper

1 teaspoon salt

1/2 teaspoon cayenne pepper

1/4 cup apple cider vinegar

2 tablespoons Worcestershire sauce

1 tablespoon Dijon mustard


Instructions

1. Remove membrane from back of ribs using a knife and paper towels

2. Pat ribs dry and apply dry rub seasoning generously

3. Marinate ribs for at least 4 hours or overnight in refrigerator

4. Bring ribs to room temperature 30 minutes before cooking

5. Preheat smoker or grill to 225-250°F for indirect cooking

6. Smoke ribs for 3 hours, maintaining consistent temperature

7. Wrap ribs in foil with marinade liquid for 2 hours

8. Unwrap and brush with honey whiskey BBQ sauce

9. Cook for final 1 hour until internal temperature reaches 190-203°F

10. Let ribs rest for 10 minutes before serving

11. Slice between bones and serve with extra BBQ sauce
