Description

This Loaded Cowboy Bacon Cheeseburger Meatloaf combines the best of comfort food – juicy ground beef, smoky bacon, and melted cheese in one incredible dish. Perfect for family dinners and guaranteed to please even the pickiest eaters.


Ingredients

1 lb lean ground beef

810 strips thick-cut smoked bacon

1/2 cup breadcrumbs

1/2 cup finely chopped onion

2 cloves garlic, minced

1 large egg

1/4 cup ketchup

1 tablespoon Worcestershire sauce

1 teaspoon dried oregano

1/2 teaspoon salt

1 cup shredded cheddar cheese

1/2 cup shredded American cheese

1/4 cup mozzarella cheese

2 tablespoons barbecue sauce (for glaze)


Instructions

1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.

2. In a large bowl, combine ground beef, breadcrumbs, chopped onion, minced garlic, egg, ketchup, Worcestershire sauce, oregano, and salt.

3. Gently mix ingredients until just combined – avoid overmixing to keep the meatloaf tender.

4. Add half of the cheddar and American cheese to the mixture, reserving the rest for topping.

5. Shape the meat mixture into a loaf on the prepared baking sheet.

6. Wrap the bacon strips around the meatloaf, securing with toothpicks if needed.

7. Brush the top with barbecue sauce for a beautiful glaze.

8. Bake for 45-60 minutes until internal temperature reaches 160°F (71°C).

9. In the last 10 minutes, top with remaining cheese and mozzarella.

10. Let rest for 5 minutes before slicing and serving.

Don’t overmix the meat mixture to avoid a dense texture.

Use a meat thermometer to ensure proper cooking temperature.

Let the meatloaf rest before slicing for easier cutting.

Leftover meatloaf makes excellent sandwiches the next day.
