Ingredients
1 large bag Volcano Nacho Doritos tortilla chips
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup warm whole milk
2 cups sharp cheddar cheese, freshly grated
1 cup shredded cheddar cheese blend
1/2 cup Romano cheese, grated
1 teaspoon ground chipotle pepper
1/2 teaspoon smoked paprika
1/2 cup sour cream
1/4 cup pickled jalapeño slices
1 medium tomato, diced
1/4 cup red onion, finely diced
1/4 cup fresh cilantro, chopped
1 lb ground beef or shredded chicken, cooked and seasoned
Salt and pepper to taste

Instructions
1. Preheat oven to 200°F and warm a large oven-safe serving tray
2. Spread Doritos chips in an even layer on the warmed tray
3. In a heavy-bottomed saucepan, melt butter over medium-low heat
4. Whisk in flour to create a smooth roux, cook for 1 minute
5. Gradually add warm milk while whisking constantly to prevent lumps
6. Add grated cheddar cheese in small handfuls, whisking until smooth and glossy
7. Season cheese sauce with chipotle, smoked paprika, salt, and pepper
8. Pour hot cheese sauce evenly over the Doritos chips
9. Sprinkle shredded cheese blend over the sauce-covered chips
10. Add cooked ground beef or chicken evenly across the surface
11. Place tray in preheated oven for 3-4 minutes until cheese melts and bubbles
12. Remove from oven and immediately top with diced tomatoes, red onion, and jalapeños
13. Drizzle thin ribbons of sour cream over the top
14. Garnish with fresh cilantro and serve immediately while hot
