Description

Ultimate triple cheese nacho dip with molten cheddar sauce, stretchy cheese pulls, and volcano-level heat. Perfect for game day parties and late-night snacking.

Ingredients

Scale

1 large bag Volcano Nacho Doritos tortilla chips

2 tablespoons butter

2 tablespoons all-purpose flour

1 cup warm whole milk

2 cups sharp cheddar cheese, freshly grated

1 cup shredded cheddar cheese blend

1/2 cup Romano cheese, grated

1 teaspoon ground chipotle pepper

1/2 teaspoon smoked paprika

1/2 cup sour cream

1/4 cup pickled jalapeño slices

1 medium tomato, diced

1/4 cup red onion, finely diced

1/4 cup fresh cilantro, chopped

1 lb ground beef or shredded chicken, cooked and seasoned

Salt and pepper to taste

Hot sauce for drizzling

Instructions

1. Preheat oven to 200°F and warm a large oven-safe serving tray

2. Spread Doritos chips in an even layer on the warmed tray

3. In a heavy-bottomed saucepan, melt butter over medium-low heat

4. Whisk in flour to create a smooth roux, cook for 1 minute

5. Gradually add warm milk while whisking constantly to prevent lumps

6. Add grated cheddar cheese in small handfuls, whisking until smooth and glossy

7. Season cheese sauce with chipotle, smoked paprika, salt, and pepper

8. Pour hot cheese sauce evenly over the Doritos chips

9. Sprinkle shredded cheese blend over the sauce-covered chips

10. Add cooked ground beef or chicken evenly across the surface

11. Place tray in preheated oven for 3-4 minutes until cheese melts and bubbles

12. Remove from oven and immediately top with diced tomatoes, red onion, and jalapeños

13. Drizzle thin ribbons of sour cream over the top

14. Garnish with fresh cilantro and serve immediately while hot

Notes

Keep chips sealed until ready to assemble to maintain crispness

For best results, serve immediately while cheese is still molten

Leftover cheese sauce can be reheated with a splash of milk

Store any leftovers in refrigerator for up to 2 days

For spicier version, add extra chipotle or hot sauce to taste

Can substitute ground turkey or rotisserie chicken for protein variation
