Description
This Instant pot bacon comfort food chowder brings smoky bacon, creamy potatoes, and savory vegetables together in one easy, soul-warming bowl. It’s the perfect quick weeknight dinner or cozy lunch.
Ingredients
8 strips bacon
2 cups Yukon Gold potatoes, diced
1 cup onion, chopped
1 cup carrots, sliced
2 celery stalks, diced
3 cups chicken broth
1 cup corn kernels (fresh or frozen)
1 cup half-and-half or heavy cream
1/2 cup shredded cheddar cheese
2 tbsp fresh chives, chopped
1 tsp smoked paprika
Salt and pepper, to taste
1 tbsp olive oil
Instructions
1. Set Instant Pot to sauté, add olive oil, and cook bacon until crispy. Remove and chop.
2. Add onion, carrots, and celery. Sauté 2–3 minutes.
3. Stir in potatoes, smoked paprika, salt, and pepper.
4. Pour in chicken broth and deglaze bottom of the pot.
5. Lock lid, set to Manual/High Pressure for 6 minutes.
6. Quick release. Add corn, half-and-half, cheese, and chopped bacon.
7. Stir, taste, and adjust seasoning. Top with chives before serving.
Notes
For extra creaminess, blend half the chowder before adding the bacon and cheese.
Try swapping in sweet potatoes or turkey bacon for a new twist.
