Ingredients
1 large Italian sub roll
4 oz salami, diced
4 oz capicola, diced
4 oz mortadella, diced
4 oz provolone cheese, diced
2 oz fresh mozzarella, diced
1/2 cup cherry tomatoes, diced
1/4 cup red onion, finely diced
1/4 cup banana peppers, diced
2 tbsp kalamata olives, chopped
2 cups iceberg lettuce, shredded
3 tbsp olive oil
2 tbsp red wine vinegar
1 tsp Italian seasoning
1/2 tsp garlic powder
Salt and pepper to taste
2 tbsp mayonnaise
Instructions
1. Slice Italian sub roll in half lengthwise and hollow out some bread from the inside
2. Dice all meats and cheeses into small uniform pieces
3. Finely chop tomatoes, red onion, banana peppers, and olives
4. Shred iceberg lettuce into thin strips
5. In a large bowl, whisk together olive oil, red wine vinegar, Italian seasoning, garlic powder, salt, and pepper
6. Add diced meats, cheeses, and chopped vegetables to the dressing
7. Toss everything together until well coated
8. Spread mayonnaise on both sides of the sub roll
9. Pile the chopped mixture generously onto the bottom half
10. Top with shredded lettuce and close the sandwich
11. Press down gently and slice in half to serve
