Ingredients
2 pounds ground beef (80/20 blend recommended)
1/2 cup Jack Daniels whiskey (divided)
1/4 cup honey
8–10 bacon strips
1 cup breadcrumbs
2 large eggs
1/4 cup ketchup
1 diced onion
2 minced garlic cloves
Salt and black pepper to taste
1/2 cup ketchup (for glaze)
2 tablespoons brown sugar
1 tablespoon Worcestershire sauce
Instructions
1. Preheat oven to 350°F and prepare a loaf pan or baking sheet with parchment paper
2. In a large mixing bowl, combine ground beef, breadcrumbs, eggs, 1/4 cup Jack Daniels, diced onion, minced garlic, salt and pepper
3. Mix ingredients gently with hands until just combined – avoid overmixing to prevent tough texture
4. Shape mixture into a loaf and place on prepared baking sheet
5. Lay bacon strips over the meatloaf, creating a lattice pattern for even coverage
6. In a small bowl, whisk together 1/2 cup ketchup, remaining Jack Daniels, brown sugar, and Worcestershire sauce for glaze
7. Bake for 45 minutes, then brush with half the glaze mixture
8. Continue baking for 30-45 minutes more, brushing with remaining glaze in final 15 minutes
9. Check internal temperature reaches 160°F with meat thermometer
10. Let rest for 10-15 minutes before slicing to retain juices
