Ingredients
4 steaks (flank or skirt steak recommended)
3 fresh jalapeños, minced
1/4 cup honey
1/4 cup high-quality tequila
2 limes (juiced and zested)
4 cloves garlic, minced
1 medium onion, diced
1/2 cup butter, softened
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Combine minced jalapeños, honey, tequila, lime juice, garlic, and onion in a bowl to create marinade
2. Place steaks in marinade and refrigerate for 2-4 hours or overnight for best flavor
3. Preheat grill to 400°F (medium-high heat)
4. Remove steaks from marinade and let come to room temperature for 15 minutes
5. Mix softened butter with lime zest and remaining lime juice to create grilled lime butter
6. Season steaks with salt and pepper before grilling
7. Grill steaks for 2-3 minutes per side for medium-rare, or 6 minutes per side for medium
8. Let steaks rest for 5 minutes before serving
9. Top with grilled lime butter and serve immediately with your favorite Mexican sides
Notes
For milder heat, remove jalapeño seeds before mincing
Marinating overnight develops the best flavor profile
Internal temperature should reach 135°F for medium-rare, 145°F for medium
Grilled lime butter can be prepared ahead and stored in refrigerator for up to 3 days
