Ingredients
2 cups sweet corn kernels (fresh, frozen, or canned)
1/2 cup mayonnaise
1 cup shredded mozzarella cheese
2 tablespoons unsalted butter, softened
1 teaspoon sugar (optional)
2 green onions, finely chopped for garnish
1/4 teaspoon gochugaru or red pepper flakes (optional, for spice)
Instructions
1. Preheat oven to 400°F (200°C). If using a cast-iron skillet, place it in the oven while preheating.
2. Drain corn kernels thoroughly to remove excess moisture. If using frozen corn, thaw completely and pat dry.
3. In a large mixing bowl, combine corn kernels with mayonnaise until well coated.
4. Add softened butter and mix well until incorporated.
5. Sprinkle mozzarella cheese generously over the corn mixture and fold gently to combine.
6. Transfer mixture to preheated cast-iron skillet or oven-safe dish.
7. Bake for 10-15 minutes, until cheese is melted, bubbly, and golden brown on top.
8. Remove from oven and garnish with chopped green onions.
9. Serve immediately while hot and cheese is still melty.
Notes
For best results, use fresh mozzarella cheese for superior melting quality.
Cast-iron skillets provide even heat distribution and attractive presentation.
Can be prepared up to 24 hours in advance – just refrigerate the mixture and bake when ready to serve.
