Description

These Lemon Butter Chicken Skewers are juicy, zesty, and full of flavor. Perfect for grilling, air frying, or meal prep. A must-try chicken recipe that comes together quickly with simple ingredients.


Ingredients

1.5 lbs boneless skinless chicken breasts, cubed

1/4 cup unsalted butter, melted

3 tablespoons fresh lemon juice

1 tablespoon lemon zest

3 garlic cloves, minced

1 tablespoon olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon paprika

Chopped parsley (for garnish)

Wooden or metal skewers


Instructions

1. Soak wooden skewers in water (if using) for 30 minutes.

2. In a bowl, whisk melted butter, lemon juice, zest, garlic, olive oil, salt, pepper, and paprika.

3. Add chicken cubes and toss to coat. Marinate for 30 minutes to 1 hour in the fridge.

4. Thread marinated chicken onto skewers.

5. Preheat grill or air fryer to 375°F (190°C).

6. Grill or air fry skewers for 12–14 minutes, turning once halfway through.

7. Baste with extra lemon butter during last 2–3 minutes.

8. Remove from heat once internal temp reaches 165°F (74°C).

9. Garnish with fresh parsley and serve hot.

Notes

For extra juiciness, use thigh meat or add a spoonful of Greek yogurt to the marinade.

Use metal skewers for even cooking, or double-up wooden skewers for stability.

Pairs perfectly with rice, roasted vegetables, or in wraps.
