Ingredients
4 large onions
1 lb ground beef
1 cup macaroni
1 cup cheddar cheese, shredded
1/2 cup cooked bacon, crumbled
1/4 cup mayonnaise
1 tbsp mustard
Salt and pepper to taste
1 cup breadcrumbs
2 tbsp olive oil
Instructions
1. 1. Preheat the oven to 375°F (190°C).
2. 2. Slice the tops off the onions and carefully scoop out the insides.
3. 3. In a pot, cook macaroni according to package instructions, then drain.
4. 4. In a skillet, brown the ground beef, seasoning with salt and pepper.
5. 5. In a bowl, mix cooked macaroni, ground beef, cheddar cheese, bacon, mayonnaise, and mustard.
6. 6. Stuff the onion shells with the mixture and top with breadcrumbs.
7. 7. Drizzle with olive oil and place in a baking dish.
8. 8. Bake for 30-35 minutes until onions are tender and tops are golden.
Notes
For an extra kick, add jalapeños to the stuffing mixture. Serve with a side of your favorite dipping sauce for a gourmet touch.
