Description

This Loaded Cowboy Cheeseburger Casserole is a cheesy, smoky, and hearty dish that combines the flavors of a juicy cheeseburger with the comfort of a baked casserole. Made with ground beef, BBQ sauce, cheddar cheese, pasta, and corn, this dish is perfect for busy weeknights or family gatherings.

Ingredients

Scale
  • 1 lb ground beef
  • 1 cup cheddar cheese, shredded
  • 1 can corn kernels, drained
  • 1 cup cooked pasta (penne or elbow)
  • 1/2 cup BBQ sauce
  • 1/2 cup diced onions
  • Salt and pepper, to taste

Instructions

  • Brown the Beef: In a skillet over medium heat, cook the ground beef with diced onions, salt, and pepper until browned. Drain excess grease.
  • Assemble the Casserole: In a baking dish, mix the cooked pasta, beef mixture, corn, BBQ sauce, and half of the shredded cheese.
  • Bake: Preheat oven to 375°F (190°C). Bake for 20-25 minutes, until bubbly and golden.
  • Top with More Cheese: Sprinkle the remaining cheese over the top and let it melt.
  • Serve & Enjoy!

Notes

  • Add crispy bacon bits for extra crunch and flavor.
  • Swap pasta for cauliflower rice to make it low-carb.
  • Use smoked cheddar or gouda for a deeper, smoky taste.
