Ingredients
2 large English cucumbers, thinly sliced
2 tablespoons rice vinegar
1 tablespoon apple cider vinegar
2 tablespoons fresh dill, chopped
1 tablespoon fresh mint, chopped
2 cloves garlic, minced
1/4 teaspoon red pepper flakes
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Using a mandoline slicer, carefully slice cucumbers into thin rounds (wear protective glove)
2. Place sliced cucumbers in a large bowl and sprinkle with salt
3. Let cucumbers sit for 10-15 minutes to draw out excess moisture
4. Drain cucumbers and pat dry with paper towels
5. In a small bowl, whisk together rice vinegar, apple cider vinegar, minced garlic, and red pepper flakes
6. Pour dressing over cucumbers and toss gently to coat
7. Add fresh dill and mint, mixing carefully
8. Season with black pepper to taste
9. Chill in refrigerator for 30 minutes before serving
10. Serve in a clear glass bowl for best presentation

For best results, use English or Persian cucumbers as they have fewer seeds and less water content
