Description

These Maple Bacon Bourbon BBQ Mac & Cheese Bombs combine classic comfort food with gourmet innovation. Crispy exterior meets creamy cheese center with smoky bacon and bourbon BBQ flavors.


Ingredients

8 ounces dry elbow pasta

12 ounces hickory smoked peppered bacon

4 ounces sharp cheddar cheese, shredded

2 ounces smoked provolone cheese, shredded

2 ounces Asiago cheese, shredded

1/2 cup bourbon whiskey

2 cups panko breadcrumbs

3 eggs, beaten

1/4 cup maple syrup

2 tablespoons BBQ sauce

1 teaspoon smoked paprika

Salt and pepper to taste

Vegetable oil for frying


Instructions

1. Cook elbow pasta according to package directions until al dente, drain and set aside

2. Cook bacon until crispy, reserve 2 tablespoons of bacon fat, chop bacon into small pieces

3. In a large saucepan, create cheese sauce by melting cheeses with reserved bacon fat over medium heat

4. Add cooked pasta, chopped bacon, and bourbon whiskey to cheese sauce, mix well

5. Season with smoked paprika, salt and pepper, let mixture cool completely

6. Refrigerate mac and cheese mixture for at least 2 hours until firm

7. Using an ice cream scoop, form mixture into uniform balls

8. Set up breading station with beaten eggs and seasoned panko breadcrumbs

9. Dip each ball in egg wash, then roll in breadcrumbs until completely coated

10. Heat oil to 350°F for deep frying or preheat oven to 400°F for baking

11. Fry for 2-3 minutes until golden brown, or bake for 15-20 minutes

12. Prepare glaze by mixing maple syrup and BBQ sauce

13. Drizzle glaze over hot mac and cheese bombs before serving

Notes

For best results, chill the mac and cheese mixture overnight
