Ingredients
8 slices of bacon
2 large eggs
4 small corn tortillas
1/4 cup shredded cheddar cheese
1/4 avocado, sliced
Fresh cilantro, for garnish
Maple syrup, for drizzling
Instructions
1. Cook the bacon in a skillet over medium heat until crispy.
2. Remove the bacon and drain on paper towels.
3. In the same skillet, scramble the eggs until cooked through.
4. Warm the corn tortillas in the skillet for about 30 seconds on each side.
5. Assemble the tacos by placing bacon and scrambled eggs on each tortilla.
6. Top with shredded cheddar cheese, avocado slices, and fresh cilantro.
7. Drizzle with maple syrup before serving.
Notes
For extra flavor, add hot sauce or salsa.
Feel free to substitute turkey bacon for a lighter option.
