Ingredients
1 pound ground beef (80/20 lean-to-fat ratio)
6–8 thick-cut bacon strips
4 large bell peppers (red, green, yellow)
1/4 cup maple syrup
2 tablespoons bourbon
1/2 cup breadcrumbs
1 large egg, beaten
2 tablespoons fresh parsley, chopped
1 tablespoon fresh thyme
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Toothpicks for securing bacon
Instructions
1. Preheat oven to 375°F and prepare baking dish
2. Wash and cut tops off bell peppers, remove seeds and membranes
3. In mixing bowl, combine ground beef, breadcrumbs, beaten egg, 2 tablespoons maple bourbon glaze, garlic powder, salt, and pepper
4. Mix ingredients gently to maintain tender texture
5. Stuff each bell pepper evenly with meatloaf mixture
6. Wrap each stuffed pepper with 1-2 bacon strips, securing with toothpicks
7. Place wrapped peppers in baking dish
8. Bake for 45-50 minutes until bacon is crispy and internal temperature reaches 160°F
9. Let rest for 10 minutes before serving
10. Drizzle with remaining maple bourbon glaze and garnish with fresh herbs
