Description
Tender chicken thighs glazed with a sweet maple sauce, served with a medley of roasted vegetables for a hearty dinner.
Ingredients
4 chicken thighs, bone-in and skin-on
2 tablespoons maple syrup
1 tablespoon olive oil
1 teaspoon dried thyme
1 teaspoon garlic powder
Salt and pepper to taste
2 cups mixed vegetables (carrots, bell peppers, and zucchini)
1 tablespoon balsamic vinegar
Instructions
1. Preheat the oven to 400 degrees F (200 degrees C).
2. In a small bowl, mix maple syrup, olive oil, thyme, garlic powder, salt, and pepper.
3. Place chicken thighs in a baking dish and brush the maple mixture over them.
4. In a separate bowl, toss mixed vegetables with balsamic vinegar, salt, and pepper.
5. Arrange the vegetables around the chicken in the baking dish.
6. Bake for 35-40 minutes or until the chicken is cooked through and the vegetables are tender.
7. Let rest for 5 minutes before serving.
Notes
For extra flavor, marinate the chicken in the maple mixture for a few hours before cooking.
