4 bone-in pork chops (11.5 inch thick)

1/4 cup dark rum

2 tbsp pure maple syrup

2 tbsp whole grain mustard

1 tbsp brown sugar

1 tbsp Worcestershire sauce

2 tbsp olive oil

Instructions

2. Mix rum, maple syrup, mustard, sugar, Worcestershire, and oil.

4. Preheat smoker to 225°F.

5. Smoke pork chops with apple or cherry wood until 145°F internal.

Notes

Brining with maple syrup and salt keeps pork chops juicy.

Use applewood or cherrywood for the best flavor.

Pairs well with grilled corn, apple slaw, or sweet potatoes.
