- 2 large flour tortillas (or your favorite flatbread)
- 1 cup cooked chicken breast, shredded or chopped
- ½ cup hummus (classic or roasted red pepper)
- ½ cup crumbled feta cheese
- ½ cup chopped cucumber
- ¼ cup diced red onion
- ½ cup cherry tomatoes, halved
- ¼ cup kalamata olives, sliced
- Handful of fresh spinach or mixed greens
- A squeeze of fresh lemon juice
- Dash of olive oil
- Salt & cracked black pepper to taste
Instructions
- Lay It Out – Warm tortillas in a dry skillet until soft and pliable
- Spread the Love – Slather hummus across the center of each tortilla
- Pile It High – Layer chicken, spinach, cucumber, tomatoes, red onion, olives, and feta. Drizzle with olive oil and lemon juice, season with salt and pepper
- Wrap It Tight – Fold in sides, roll burrito-style, and press to seal. Optional: toast in skillet for crispy exterior
- Slice & Serve – Cut in half and serve immediately
