The perfect balance of fudgy interior and crackly top makes these brownies a showstopping treat that will have everyone asking for seconds!
Ingredients
Scale
- 1 cup (2 sticks) unsalted butter, cut into pieces
- 8 oz semisweet chocolate, chopped
- 1½ cups granulated sugar
- ¼ cup packed brown sugar
- 4 large eggs
- 2 tsp pure vanilla extract
- 1 cup all-purpose flour
- ½ cup unsweetened cocoa powder
- ½ tsp kosher salt
- ½ cup heavy cream
- 4 oz semisweet chocolate, chopped (for fudge swirl)
- 12 Oreo cookies, roughly chopped (about 1 cup)
Instructions
- Preheat your oven to 350°F (175°C). Grease or line a 9×9-inch baking pan with parchment paper, creating a sling with overhang for easy removal.
- In a small saucepan over medium heat, warm the heavy cream just until it begins to steam. Remove from heat, stir in the 4 oz chopped chocolate until silky smooth, then set aside to cool slightly.
- In a heat-proof bowl set over (not in) simmering water, combine the butter and 8 oz chopped chocolate. Stir until melted and glossy—you want it nice and smooth.
- Remove the bowl from the heat and whisk in both sugars until fully incorporated. Let the mixture cool for about 2 minutes, then whisk in the eggs one at a time, followed by the vanilla extract.
- Sift in the flour, cocoa powder, and salt. Gently fold with a rubber spatula just until no streaks of flour remain—don’t overmix, or your brownies will lose that tender crumb.
- Pour half of the brownie batter into your prepared pan, smoothing the top. Dollop spoonfuls of the cooled fudge swirl all over, then top with the remaining batter. Drag a knife or skewer through to create a marbled effect.
- Scatter the chopped Oreo pieces over the top, gently pressing them into the batter.
- Bake for 25–30 minutes, or until the edges are set but the center still jiggles slightly. Remember, brownies continue to set as they cool.
- Let the pan rest on a wire rack for at least 1 hour. Lift the parchment to remove, then slice into squares.
- Serve and enjoy!
Notes
- For the best texture, be careful not to overbake. The center should still jiggle slightly when you remove the brownies from the oven.
- Allow the brownies to cool completely (at least 1 hour) before cutting for clean, neat squares.
- Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
- These brownies freeze beautifully for up to 3 months. Wrap individual pieces in plastic wrap and foil before freezing.
- For an extra decadent treat, warm a square slightly and serve with vanilla ice cream.
