Ingredients
1 ½ cups all-purpose flour
1 cup granulated sugar
½ cup unsweetened cocoa powder
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
1 cup buttermilk
½ cup vegetable oil
2 large eggs
1 tsp vanilla extract
1 cup boiling water
1 cup creamy peanut butter
1 cup powdered sugar
1 cup heavy cream
1 tsp vanilla extract
Chocolate shavings for garnish
Instructions
1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
2. In a large bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
3. Add buttermilk, vegetable oil, eggs, and vanilla extract to the dry ingredients and mix until smooth.
4. Stir in boiling water until well combined.
5. Divide the batter evenly between the prepared pans and bake for 30-35 minutes.
6. Let the cakes cool completely before removing from pans.
7. In a separate bowl, beat together peanut butter and powdered sugar until smooth.
8. In another bowl, whip heavy cream and vanilla extract until soft peaks form.
9. Fold the whipped cream into the peanut butter mixture until well combined.
10. Layer the cakes with the peanut butter filling in between and on top.
11. Garnish with chocolate shavings before serving.
Notes
For an extra touch, drizzle melted chocolate over the top before serving.
