This miso glazed bacon recipe transforms thick-cut bacon into a sticky, savory-sweet masterpiece. The glaze—made with white miso, maple syrup, and soy sauce—caramelizes in the oven to create crisp edges and deep umami flavor. Perfect for brunch boards, gourmet burgers, or bold appetizers.

8 slices thick-cut bacon

2 tablespoons white miso paste

1 tablespoon maple syrup or honey

1 tablespoon soy sauce

1 teaspoon rice vinegar

Optional: 1/2 teaspoon minced garlic

Optional: 1/2 teaspoon grated ginger

Optional: pinch of chili flakes or sesame oil


Instructions

1. Preheat oven to 400°F and line a baking sheet with foil.

2. Lay bacon slices flat on the baking sheet, without overlapping.

3. Bake bacon for 10–12 minutes until fat starts to render but not fully crispy.

4. Meanwhile, whisk together miso paste, maple syrup, soy sauce, and rice vinegar in a bowl. Add optional flavorings if desired.

5. Remove bacon from oven. Brush each slice generously with the miso glaze.

6. Return glazed bacon to oven for another 5–8 minutes, or until edges crisp and glaze bubbles.

7. Let cool 2–3 minutes on a rack before serving. Glaze will set slightly as it cools.

8. Serve immediately or use in sandwiches, salads, or appetizers.

Notes

White miso works best for a mild, sweet-savory balance. Use red miso for a bolder flavor.

Watch the bacon closely after glazing—it can go from golden to burnt quickly due to sugar content.
