Description
This Mushroom Swiss Bacon Meatloaf combines ground beef, pork, mushrooms, and Swiss cheese for a juicy, cheesy, gourmet comfort food experience.
Ingredients
12 ounces bacon strips
1 small white onion
5 button mushrooms
1½ pounds extra-lean ground beef
¼ cup evaporated milk
1 large egg
6 ounces Swiss cheese
½ cup cornflake crumbs
Instructions
1. Preheat oven to 350°F (175°C) and prepare a loaf pan with parchment paper and light grease.
2. Chop bacon, mushrooms, and onions finely.
3. Sauté mushrooms and onions in a pan until softened.
4. In a large bowl, combine ground beef, evaporated milk, egg, sautéed veggies, chopped bacon, cornflake crumbs, and half the Swiss cheese.
5. Mix gently with your hands or fork until combined.
6. Press the meatloaf mixture into the loaf pan.
7. Bake for 55–60 minutes or until internal temp reaches 160°F.
8. In last 5 minutes, top with remaining Swiss cheese and reserved bacon bits.
9. Let it rest for 10 minutes before slicing.
Notes
Use a meat thermometer to ensure it’s cooked through.
To make gluten-free, use gluten-free breadcrumbs or crushed crackers.
Leftovers can be stored in fridge for up to 4 days or frozen for 1 month.
