Ingredients

8 burger buns, toasted

2 large sweet yellow onions, sliced

2 cups shredded cheddar cheese

1/4 cup bourbon

4 tablespoons butter

2 tablespoons brown sugar

1 teaspoon salt

1/2 teaspoon black pepper

1 cup all-purpose flour (for onion rings)

Vegetable oil for frying

Fresh lettuce leaves

Crispy bacon slices (optional)


Instructions

1. Slice sweet yellow onions thinly and sauté in butter until softened, about 8-10 minutes

2. Add salt, brown sugar, and bourbon to the pan, cooking until caramelized and glazed, about 5 more minutes

3. Divide ground beef into 8 equal portions and form into patties

4. Create an indentation in 4 patties, add shredded cheddar cheese, and seal with remaining patties

5. Season patties with salt and pepper on both sides

6. Heat grill or skillet to medium-high heat and cook patties 7-10 minutes, flipping halfway through

7. Prepare onion rings by coating caramelized onions in flour and frying until crispy, 2-3 minutes

8. Toast burger buns on the grill for 1-2 minutes until golden

9. Assemble burgers by placing cooked patty on bottom bun, topping with bourbon-glazed onion rings

10. Add lettuce, bacon if desired, and crown with top bun

11. Serve immediately while cheese is molten and onion rings are crispy

Notes

For best results, use grass-fed beef with 80/20 fat ratio for juicy patties

Allow beef to come to room temperature before cooking for even cooking

Don’t press down on patties while cooking to retain juices

Bourbon-glazed onions can be made ahead and reheated before serving
