Description

11.5 lb chicken tenders or breast strips

1 large bag Nacho Cheese Doritos, crushed to coarse crumbs

1 cup all-purpose flour

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon black pepper

1 teaspoon salt

2 large eggs, beaten (or 1/2 cup mayonnaise)

Cooking spray


Instructions

1. Preheat air fryer or oven to 400°F. Line baking sheet with wire rack if using oven.

2. Crush Doritos in zip-lock bag with rolling pin until coarse panko-sized crumbs form.

3. Mix flour with smoked paprika, cayenne, garlic powder, onion powder, black pepper, and salt.

4. Set up breading station: seasoned flour, beaten eggs, crushed Doritos in shallow dishes.

5. Pat chicken dry and season lightly with salt.

6. Dredge each piece in seasoned flour, dip in beaten egg, press firmly into Doritos crumbs.

7. For air fryer: Cook 10-12 minutes, flipping once at 6 minutes. Spray lightly with oil.

8. For oven: Bake 15-18 minutes on wire rack. No flipping needed.

9. Check internal temperature reaches 165°F before serving.

10. Serve immediately with volcano dip.

Notes

Store leftovers in refrigerator up to 3 days. Reheat in 400°F oven 5-6 minutes to restore crispness.

Substitute Cool Ranch or Spicy Sweet Chili Doritos for different flavors.
