Ingredients
1 lb high-quality ground beef (20% fat content)
4 burger buns
2 cups frozen french fries
1 lb ground beef for chili
1 medium onion, diced
3 cloves garlic, minced
1 can (14.5 oz) diced tomatoes
1 can (15 oz) kidney beans, drained
2 tsp chili powder
1 tsp ground cumin
1 tsp paprika
1/2 tsp smoked paprika
1/4 tsp cayenne pepper
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1 tbsp cornstarch
1 cup mayonnaise
1 tbsp minced garlic
1 tsp lemon juice
1 tsp smoked paprika
Salt and pepper to taste
Vegetable oil for frying
Instructions
1. Heat vegetable oil to 350°F for frying. Fry french fries twice – first at lower temperature to cook through, then at higher temperature to crisp up. Season with paprika and garlic powder.
2. Brown 1 lb ground beef with diced onions and garlic in a large pot. Add diced tomatoes, kidney beans, chili powder, cumin, paprika, smoked paprika, and cayenne pepper. Simmer for 20-30 minutes until flavors meld.
3. Mix grated cheddar and Monterey Jack cheese with cornstarch to prevent oiling when melted.
4. Combine mayonnaise, minced garlic, lemon juice, smoked paprika, salt, and pepper in a bowl. Mix until smooth for smoky aioli.
5. Heat skillet until almost smoking. Add small amount of oil to prevent sticking.
6. Form 1/4 lb ground beef into loose balls. Season with salt and pepper.
7. Place beef ball on hot skillet and immediately press down firmly with spatula to create thin patty with crispy edges. Cook 2-3 minutes without moving.
8. Flip patty and cook additional 1-2 minutes. Add cheese if desired.
9. Toast burger buns lightly in skillet or toaster.
10. Assemble burger: bottom bun, smoky aioli, smash patty, generous portion of chili, crispy fries, cheese blend, more chili, top bun with additional aioli.
Notes
For best results, use ground beef with 20% fat content for juiciness.
Double-frying method creates the crispiest fries – first fry cooks through, second fry creates crispy exterior.
Press patties firmly but only once to maintain juices while creating crispy crust.
Prepare all components before assembly for best temperature and texture.
