Ingredients
4 high-quality German bratwurst sausages

4 oz sharp cheddar cheese, shredded

Instructions
1. Heat 1 tablespoon butter in a large skillet over medium-high heat. Add bratwurst and brown on all sides, about 6-8 minutes total.
2. Add sliced onions to the pan with the bratwurst. Cook for 2-3 minutes until onions begin to soften.
3. Pour the entire bottle of Oktoberfest beer into the pan, bringing to a simmer. Reduce heat to medium-low.
4. Let bratwurst braise in beer for 20-25 minutes, turning occasionally, until cooked through and sauce has thickened. Remove from heat and let cool slightly.
5. Slice bratwurst into 1/4-inch thick rounds. Reserve the beer-braised onions.
6. Butter one side of each bread slice with remaining butter. Place 4 slices butter-side down on work surface.
7. Layer each bread slice with shredded Gruyère, bratwurst slices, beer-braised onions, and sharp cheddar. Top with remaining bread slices, butter-side up.
8. Heat a griddle or large skillet over medium heat. Grill sandwiches for 3-4 minutes per side until golden brown and cheese is fully melted.
9. Cut sandwiches diagonally and serve immediately with spicy German mustard and sauerkraut.
