4 bratwurst sausages (traditional German-style)

8 slices thick-cut smoked bacon

4 pretzel buns (or hamburger buns)

4 slices Swiss cheese

1 cup sauerkraut, drained

1 large onion, sliced for caramelizing

2 tablespoons butter (for caramelizing onions)

1 tablespoon vegetable oil (for cooking)

Spicy mustard, to taste

Ketchup, to taste

Salt and pepper to taste

Optional: 1/4 cup beer for deglazing


Instructions

1. Preheat your grill or cast-iron griddle to medium heat. If using a grill, oil the grates lightly.

2. Grill or pan-fry the bratwurst sausages for 15-20 minutes, turning occasionally, until golden brown and cooked to an internal temperature of 160°F. Set aside to rest.

3. While bratwurst cooks, prepare the bacon. Cook bacon slices in a skillet or bake in oven at 400°F until crispy (about 12-15 minutes). Drain on paper towels.

4. In the same skillet, add butter and sliced onions. Cook over medium-low heat for 15-20 minutes, stirring occasionally, until deeply caramelized. Deglaze with beer if desired.

5. Toast pretzel buns on the grill or in a toaster until lightly golden.

6. Assemble burgers: Spread mustard and ketchup on bottom bun, add bratwurst patty, top with Swiss cheese (let melt from residual heat), add 2 slices crispy bacon, caramelized onions, and sauerkraut.

7. Top with upper bun and serve immediately with German potato salad or crispy fries.

Notes

For extra flavor, simmer bratwurst in beer before grilling for 5 minutes.
