2 tablespoons all-purpose flour

1/2 cup heavy cream

1/2 teaspoon garlic powder

1/4 teaspoon onion powder

12 slider buns, toasted

Optional toppings: sauerkraut, caramelized onions, whole grain mustard, fresh parsley


Instructions

1. Preheat grill to medium-high heat (400°F) or heat a large skillet over medium-high heat.

2. Grill bratwurst for 5-7 minutes per side until nicely browned with char marks and internal temperature reaches 160°F. If using a skillet, cook for same duration.

3. While bratwurst cooks, make beer cheese sauce: Melt butter in medium saucepan over medium heat.

4. Add flour to melted butter, whisking constantly to create a roux. Cook for 1-2 minutes until golden and fragrant.

5. Gradually pour in beer and heavy cream, whisking continuously to prevent lumps.

6. Bring mixture to a gentle simmer, stirring frequently. Cook for 3-4 minutes until sauce thickens.

7. Remove from heat and stir in cheddar and Gruyere cheese until completely melted and smooth. Add garlic powder and onion powder. Season with salt and pepper to taste.

8. Slice cooked bratwurst into thirds or halves to fit slider buns.

9. Toast slider buns lightly on the grill or in a skillet for 30-60 seconds.

10. Place bratwurst pieces on bottom buns, generously drizzle with beer cheese sauce.

11. Add desired toppings such as sauerkraut, caramelized onions, or mustard.

12. Top with bun tops and serve immediately while hot.

Notes

For authentic Oktoberfest flavor, use a traditional German Märzen or Oktoberfest-style beer in the cheese sauce.

The beer cheese sauce can be made ahead and reheated gently, adding a splash of cream if needed to restore consistency.

For a crispier bun, butter the insides before toasting.
