Instructions

1. Preheat oven to 425°F (220°C). Line a 12-cup muffin tin with paper liners or grease thoroughly.

2. In a large bowl, sift together flour, cocoa powder, instant coffee powder, sugar, baking powder, baking soda, and salt.

3. In a separate bowl, whisk together eggs, buttermilk, oil, and vanilla extract until well combined.

4. Pour wet ingredients into dry ingredients and gently fold together until just combined. Don’t overmix.

5. Stir in chocolate chunks and add hot coffee to create a smooth batter.

6. Let batter rest for 10 minutes to develop flavor and texture.

7. Divide batter evenly among muffin cups, filling each about 3/4 full.

8. Bake at 425°F for 5 minutes, then reduce temperature to 350°F (175°C) and bake for 12-15 minutes more.

9. Test doneness with a toothpick – it should come out with a few moist crumbs.

10. Cool in pan for 5 minutes, then transfer to a wire rack to cool completely.
