Ingredients
4 boneless, skinless chicken breasts
2 cups broccoli florets
1 cup cherry tomatoes
1 cup sliced bell peppers
4 cloves garlic, minced
1 cup heavy cream
1 cup chicken broth
1 teaspoon Italian seasoning
Salt and pepper to taste
2 tablespoons olive oil
Fresh parsley for garnish
Instructions
1. Heat olive oil in a large skillet over medium heat.
2. Season chicken breasts with salt, pepper, and Italian seasoning.
3. Add chicken to the skillet and cook until golden brown, about 6-7 minutes per side.
4. Remove chicken and set aside.
5. In the same skillet, add garlic and sauté until fragrant.
6. Add broccoli, bell peppers, and cherry tomatoes; cook for 5 minutes.
7. Pour in chicken broth and heavy cream, stirring to combine.
8. Return chicken to the skillet, cover, and simmer for 10 minutes.
9. Garnish with fresh parsley before serving.
Notes
For a lighter version, substitute heavy cream with half-and-half.
