Ingredients
4–5 bone-in pork chops (about 1-inch thick)
1 cup freshly grated Parmesan cheese
2 lbs Yukon Gold or Russet potatoes, thinly sliced
2 cups sharp Cheddar cheese, shredded
1 large sweet yellow onion, thinly sliced
2 cups whole milk
4 tablespoons unsalted butter
3 tablespoons all-purpose flour
2 cups chicken broth
1 teaspoon garlic powder
1 teaspoon dried herbs (thyme or rosemary)
Salt and freshly ground black pepper to taste
2 tablespoons olive oil for cooking
Instructions
1. Preheat your oven to 375°F (190°C) and grease a 13×9-inch baking dish
2. Using a mandoline or sharp knife, slice potatoes to about 1/8-inch thickness
3. Season pork chops with salt, pepper, garlic powder, and dried herbs, then coat with half the Parmesan cheese
4. Let pork chops marinate for at least 30 minutes at room temperature
5. Layer half the sliced potatoes and onions in the prepared baking dish
6. In a saucepan, melt butter and whisk in flour to create a roux
7. Gradually add chicken broth and milk, whisking continuously until smooth and thickened
8. Pour half the gravy mixture over the potato layer
9. Add remaining potatoes and onions, then pour remaining gravy on top
10. Cover with foil and bake for 1 hour
11. Heat olive oil in a large oven-safe skillet over medium-high heat
12. Sear pork chops for 3-4 minutes per side until golden brown
13. Remove foil from potatoes and nestle pork chops on top
14. Sprinkle remaining Parmesan and Cheddar cheese over everything
15. Bake uncovered for 30 minutes until pork reaches 145°F internal temperature
16. Let rest for 10-15 minutes before serving to allow sauce to set
Notes
For extra crispy pork chops, pat them completely dry before seasoning
A mandoline slicer ensures perfectly even potato slices for uniform cooking
Don’t skip the resting time – it helps the scalloped potatoes set properly
Leftover portions can be stored in the refrigerator for up to 3 days
This recipe can be made ahead by preparing components separately and assembling before baking
For a lighter version, substitute low-fat milk and reduce cheese quantities
