45 large fresh peaches, peeled and sliced 1 cup fresh blueberries 2 tablespoons cornstarch 1/4 cup brown sugar 1/4 cup water 2 tablespoons butter 1 teaspoon lemon juice 1 1/2 cups all-purpose flour 1/2 cup granulated sugar 2 teaspoons baking powder 1/2 teaspoon salt 1/2 cup cold butter, cubed 1/2 cup milk Extra sugar for sprinkling


Instructions

Preheat oven to 375°F (190°C). Wash and slice peaches, removing skin by blanching in boiling water for 30 seconds. Mix peaches with fresh blueberries in a large bowl. In a saucepan, combine cornstarch, brown sugar, and water. Cook until mixture thickens. Add 2 tablespoons butter and lemon juice to the thickened mixture. Stir until smooth. Pour fruit mixture into a greased 9×13 inch baking dish. In a separate bowl, combine flour, granulated sugar, baking powder, and salt. Cut in cold butter until mixture resembles coarse crumbs. Stir in milk until just combined – don’t overmix. Drop cobbler topping in spoonfuls over the fruit filling. Sprinkle with additional sugar if desired. Bake for 35-40 minutes until topping is golden brown and fruit is bubbling. Let cool for 10-15 minutes before serving.

Notes

For best results, use ripe but firm peaches that are slightly soft when pressed. Fresh fruit is preferred, but you can substitute with frozen fruit if needed – just thaw and drain well. Serve warm with vanilla ice cream for the ultimate summer dessert experience. Cobbler can be stored in refrigerator for 3-4 days and reheated in 350°F oven for 15-20 minutes. For a healthier version, substitute Greek yogurt for some of the butter and reduce sugar content.
