This Elvis-inspired French toast bake combines peanut butter, bacon, and banana flavors into an amazing breakfast casserole. Perfect for weekend brunch and special occasions, this make-ahead recipe serves a crowd with indulgent comfort food flavors.
Ingredients
8 slices thick-cut brioche bread, cubed
6 large farm-fresh eggs
2 cups whole milk
1/2 cup creamy peanut butter
8 strips crispy bacon, cooked and chopped
3 ripe bananas, sliced
1/4 cup pure maple syrup
1 1/2 tsp vanilla extract
1 tsp ground cinnamon
1/4 tsp salt
Butter for greasing
Instructions
1. Grease a 9×13 inch baking dish with butter
2. Cube the brioche bread and arrange half in the prepared dish
3. Spread peanut butter over bread layer, add half the bacon and banana slices
4. Top with remaining bread cubes, bacon, and bananas
5. Whisk together eggs, milk, maple syrup, vanilla, cinnamon, and salt
6. Pour custard mixture evenly over bread layers
7. Cover and refrigerate for at least 2 hours or overnight
8. Preheat oven to 375°F and bake for 25-30 minutes until golden brown
9. Let cool for 5 minutes before serving with additional maple syrup
