Description

A savory and indulgent meatloaf featuring pepper jack cheese and crispy bacon, infused with a smoky BBQ flavor. Perfect for a comforting dinner.


Ingredients

1 1/2 lbs ground beef

1 cup breadcrumbs

1/2 cup diced onion

1/2 cup diced bell pepper

1/2 cup shredded pepper jack cheese

1/4 cup cooked and crumbled bacon

1/4 cup BBQ sauce

2 large eggs

1 tsp garlic powder

1 tsp salt

1/2 tsp black pepper

1/4 tsp cayenne pepper


Instructions

1. Preheat the oven to 350°F (175°C).

2. In a large bowl, combine ground beef, breadcrumbs, onion, bell pepper, pepper jack cheese, bacon, BBQ sauce, eggs, garlic powder, salt, black pepper, and cayenne pepper.

3. Mix until well combined.

4. Transfer the mixture to a loaf pan and shape into a loaf.

5. Spread additional BBQ sauce on top of the meatloaf.

6. Bake for 1 hour or until the internal temperature reaches 160°F (70°C).

7. Let rest for 10 minutes before slicing and serving.

Notes

For an extra kick, add more cayenne pepper or serve with additional BBQ sauce on the side.
