Ingredients
6 large Russet potatoes, peeled and diced
4 cups low-sodium chicken broth
1 cup heavy cream
6 strips thick-cut bacon, chopped
1 medium white onion, diced
4 cloves garlic, minced
3 tablespoons butter

1/2 teaspoon black pepper
1/4 cup fresh chives, chopped
1 cup shredded cheddar cheese
1/2 cup sour cream
2 tablespoons all-purpose flour (optional, for thickening)
Instructions
1. Cook chopped bacon in a large Dutch oven or soup pot over medium heat until crispy, about 6-8 minutes. Remove bacon and set aside, leaving 2 tablespoons of fat in the pot.
2. Add diced onion to the bacon fat and sauté for 3-4 minutes until softened and translucent.
3. Add minced garlic and cook for another 30 seconds until fragrant.
4. Add diced potatoes and chicken broth to the pot. Bring to a boil, then reduce heat and simmer for 15-20 minutes until potatoes are fork-tender.
5. Using an immersion blender, partially blend the soup to achieve desired consistency – leave some potato chunks for texture.
6. Stir in butter and heavy cream. If using flour for thickening, whisk it with a small amount of cold broth before adding.
7. Season with salt and pepper to taste. Simmer for 2-3 more minutes.
