- 1¾ cups all-purpose flour
- 1 cup granulated sugar
- ½ cup packed brown sugar
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- 2 teaspoons ground cinnamon
- ½ teaspoon ground nutmeg
- ¼ teaspoon ground cloves
- ¼ teaspoon ground ginger
- 2 large eggs
- 1 (15 oz) can pure pumpkin puree (not pie filling)
- ½ cup vegetable oil
- ¼ cup milk
- 1 teaspoon vanilla extract
- ½ cup chopped pecans or walnuts, or mini chocolate chips (optional)
Instructions
- Preheat your oven to 375°F. Line a 12-cup muffin tin with paper liners or grease well.
- In a large mixing bowl, whisk together flour, both sugars, baking soda, baking powder, salt, cinnamon, nutmeg, cloves, and ginger.
- In a separate bowl, beat eggs then stir in pumpkin, oil, milk, and vanilla until smooth.
- Pour wet ingredients into dry ingredients and gently fold together just until combined. Don’t overmix—lumps are fine.
- If using nuts or chocolate chips, fold them in now.
- Spoon batter evenly into muffin cups, filling each about ¾ full.
- Bake for 20-22 minutes, or until a toothpick inserted in the center comes out clean.
- Let muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- For extra flavor, try adding ½ teaspoon of orange zest to the batter
- Store in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months
- For a streusel topping, mix ¼ cup flour, ¼ cup brown sugar, ¼ teaspoon cinnamon, and 3 tablespoons cold butter until crumbly, then sprinkle over batter before baking
- Make sure to use pure pumpkin puree, not pumpkin pie filling which contains added sugar and spices
