Ingredients
2 cups old-fashioned rolled oats
1/2 cup pumpkin puree
1 cup almond milk
3 tablespoons pure maple syrup
2 teaspoons pumpkin pie spice
1/4 teaspoon vanilla extract
1/4 teaspoon salt
1/4 cup chopped pecans (optional)
2 tablespoons dark chocolate chips (optional)
1 tablespoon chia seeds (optional)
Instructions
1. Preheat oven to 350°F (175°C)
2. Mix dry ingredients (oats, pumpkin pie spice, salt) in a large bowl
3. Combine wet ingredients (pumpkin puree, almond milk, maple syrup, vanilla) in separate bowl
4. Blend wet and dry mixtures thoroughly until well combined

6. Pour mixture into a greased 8×8 inch baking dish
7. Bake for 30-35 minutes until golden brown and set
