Description

Fresh and healthy roasted carrot lettuce wraps featuring sweet, caramelized carrot matchsticks seasoned with smoked paprika and cumin, nestled in crisp lettuce leaves with creamy avocado, crunchy purple cabbage, and a tangy yogurt sauce.


Ingredients

  • pounds carrots, peeled and cut into matchsticks (about 3 inches long)
  • 2 tablespoons olive oil
  • 1 tablespoon maple syrup
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • Salt & black pepper, to taste
  • 1 head of butter lettuce
  • ½ cup shredded purple cabbage
  • 1 avocado, thinly sliced
  • ¼ cup crumbled feta or goat cheese (optional)
  • 2 tablespoons toasted pumpkin seeds or chopped nuts
  • Fresh cilantro or parsley, for garnish

For Creamy Yogurt Sauce:

  • ½ cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon tahini (optional)
  • 1 teaspoon garlic powder
  • Salt & pepper to taste
  • Splash of water to thin

Instructions

  • Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • Toss carrot matchsticks with olive oil, maple syrup, smoked paprika, cumin, salt, and pepper. Arrange in single layer on baking sheet.
  • Roast for 25-30 minutes, flipping halfway through, until golden and tender with crispy edges.
  • Meanwhile, whisk together all yogurt sauce ingredients until smooth. Thin with water if needed.
  • Assemble wraps by placing roasted carrots in lettuce leaves, top with cabbage, avocado, cheese, seeds, and sauce.
  • Garnish with fresh herbs and serve immediately.

  • Cut carrots into uniform matchsticks for even cooking
