- 1½ pounds carrots, peeled and cut into matchsticks (about 3 inches long)
- 2 tablespoons olive oil
- 1 tablespoon maple syrup
- 1 teaspoon smoked paprika
- ½ teaspoon ground cumin
- Salt & black pepper, to taste
- 1 head of butter lettuce
- ½ cup shredded purple cabbage
- 1 avocado, thinly sliced
- ¼ cup crumbled feta or goat cheese (optional)
- 2 tablespoons toasted pumpkin seeds or chopped nuts
- Fresh cilantro or parsley, for garnish
For Creamy Yogurt Sauce:
- ½ cup plain Greek yogurt
- 1 tablespoon lemon juice
- 1 tablespoon tahini (optional)
- 1 teaspoon garlic powder
- Salt & pepper to taste
- Splash of water to thin
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Toss carrot matchsticks with olive oil, maple syrup, smoked paprika, cumin, salt, and pepper. Arrange in single layer on baking sheet.
- Roast for 25-30 minutes, flipping halfway through, until golden and tender with crispy edges.
- Meanwhile, whisk together all yogurt sauce ingredients until smooth. Thin with water if needed.
- Assemble wraps by placing roasted carrots in lettuce leaves, top with cabbage, avocado, cheese, seeds, and sauce.
- Garnish with fresh herbs and serve immediately.

- Cut carrots into uniform matchsticks for even cooking
- Don’t overcrowd baking sheet to ensure proper roasting
- Serve immediately after assembly to maintain lettuce crispness
