Ingredients
4 boneless, skinless chicken breasts
2 cups broccoli florets
1 cup diced bell peppers
1 cup sliced carrots
3 tablespoons olive oil
2 teaspoons dried thyme
2 teaspoons dried rosemary
Salt and pepper to taste
Instructions
1. Preheat the oven to 400 degrees F (200 degrees C).
2. In a large bowl, combine olive oil, thyme, rosemary, salt, and pepper.
3. Add chicken breasts to the bowl and coat them well with the herb mixture.
4. Place the chicken in a baking dish and surround it with broccoli, bell peppers, and carrots.
5. Drizzle any remaining herb mixture over the vegetables.
6. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and vegetables are tender.
