Description
Fluffy, caramelized Austrian-style scrambled pancakes served with powdered sugar and fruit compote.
Ingredients
4 eggs (separated)
1 cup all-purpose flour
1 cup whole milk
2 tbsp sugar
Pinch of salt
1/3 cup rum-soaked raisins
2 tbsp unsalted butter
Powdered sugar for dusting
Applesauce or plum compote for serving
Instructions
1. Whisk egg yolks with milk, sugar, and salt.
2. Fold in flour until smooth.
3. Beat egg whites to stiff peaks and gently fold into batter.
4. Heat butter in a cast-iron skillet over medium heat.
5. Pour batter, cook until golden, then flip and tear into pieces.
6. Sprinkle sugar and caramelize pancake shreds.
7. Serve dusted with powdered sugar and fruit compote.
Notes
Use fresh eggs and quality butter for best results. Optional: substitute raisins with chopped apples or berries.
