Instructions

  • Prepare the Shrimp:

    • In a bowl, mix olive oil, chili powder, cumin, garlic powder, paprika, salt, pepper, and lime juice.
    • Add shrimp and toss to coat. Marinate for 10-15 minutes.
  • Make the Mango Salsa:

    • In a bowl, combine diced mangoes, red onion, jalapeño, cilantro, lime juice, and a pinch of salt. Mix gently and set aside.
  • Cook the Shrimp:

    • Heat a skillet over medium-high heat. Add marinated shrimp and cook for 2-3 minutes per side until pink and cooked through.
  • Warm the Tortillas:

    • Heat tortillas in a dry skillet or microwave until warm and pliable.
