Ingredients
2 1/2 cups all-purpose flour
2 cups granulated sugar
1 cup unsalted butter, room temperature
4 large eggs

2 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup whole milk
1–2 pounds gray fondant
Pink food coloring
Black candy eyes or chocolate chips
Chocolate sprinkles for texture
Buttercream frosting
Almond slivers for ears
Pretzel sticks for tails
Instructions
1. Preheat oven to 350°F (175°C). Grease and flour rat-shaped cake molds or round cake pans.
2. In a large bowl, cream together butter and sugar until light and fluffy, about 3-4 minutes.
3. Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
4. In separate bowl, whisk together flour, baking powder, and salt.
5. Alternately add dry ingredients and milk to butter mixture, beginning and ending with flour mixture.
6. Pour batter into prepared molds, filling 2/3 full. Bake for 25-30 minutes until toothpick comes out clean.
7. Cool completely in pans for 10 minutes, then turn out onto wire racks.
8. Trim cakes to create rat body shape if using round pans. Apply thin layer of buttercream as base.
9. Roll out gray fondant and cover cake smoothly. Trim excess, leaving enough to tuck under.
10. Add pink food coloring to small fondant piece for inner ears. Shape and attach ears.
11. Place candy eyes and use fine piping tip to create whiskers and nose details.
12. Add chocolate sprinkles for fur texture. Insert pretzel stick for tail.
13. Refrigerate 30 minutes to set decorations before serving.
