Ingredients
1 lb ground beef (80/20 blend)
1 tsp salt
1/2 tsp black pepper
1 tsp garlic powder
8 small flour tortillas
8 slices American cheese
2 cups shredded lettuce
1 large tomato, diced
1/2 cup diced onions
1/4 cup pickles, chopped
Special sauce (mayo, ketchup, mustard mix)
2 tbsp vegetable oil
Instructions
1. Heat large skillet or griddle over medium-high heat with oil
2. Divide ground beef into 8 small balls, season with salt, pepper, and garlic powder
3. Place beef balls on hot surface and immediately smash flat with spatula
4. Cook for 2-3 minutes until crispy edges form, flip and add cheese slice
5. Cook additional 1-2 minutes until cheese melts
6. Warm tortillas in dry pan for 30 seconds each side
7. Assemble tacos with smash patty, lettuce, tomato, onions, pickles
8. Drizzle with special sauce and serve immediately
Notes
Don’t press the patties after initial smash – this keeps them juicy
Use a heavy spatula or burger press for best smashing results
Tortillas can be substituted with hard taco shells if preferred
Make special sauce by mixing 1/3 cup mayo, 2 tbsp ketchup, 1 tbsp yellow mustard
