Ingredients

8 slices premium sourdough bread

6 oz raw smoked bacon

4 oz white cheddar cheese, sliced

4 oz gruyère cheese, sliced

2 large apples, thinly sliced

1 shallot, thinly sliced

2 sprigs fresh thyme

1 sprig fresh rosemary

1/4 cup maple syrup

Butter for spreading

Kosher salt to taste

Black pepper to taste


Instructions

1. Cook smoked bacon in cast-iron skillet until golden and crispy. Remove bacon and reserve fat in pan.

2. Sauté sliced apples and shallot in bacon fat until caramelized, about 5-7 minutes.

3. Add maple syrup and fresh herbs, cook 2 more minutes until golden.

4. Butter exterior sides of sourdough bread slices.

5. Layer sharp cheddar cheese on inside of bread slices.

6. Add crispy bacon strips over cheese.

7. Top with caramelized apple mixture.

8. Add gruyère cheese layer and close sandwich.

9. Heat cast-iron skillet over medium-low heat.

10. Cook sandwich 3-4 minutes per side until golden brown and cheese melts.

11. Let cool 2 minutes before slicing diagonally.

12. Serve immediately while warm and crispy.

Notes

Use medium-low heat to prevent burning while ensuring cheese melts completely.

Cast-iron skillet provides even heat distribution for perfect browning.

Can prepare caramelized apples and bacon in advance and store refrigerated.
