6 oz smoked Gouda cheese, sliced

8 slices artisan onion bread

4 tbsp barbecue sauce

2 tsp chipotle adobo seasoning

1 fresh jalapeño, sliced

1 medium red onion, sliced

2 tbsp butter

1 tbsp Dijon mustard


Instructions

1. Season beef brisket with chipotle adobo seasoning and slow-cook for 4-6 hours at 225°F

2. Shred the cooked brisket and mix with barbecue sauce

3. Butter one side of each bread slice

4. Spread Dijon mustard on the unbuttered side of 4 bread slices

5. Layer shredded brisket, smoked Gouda cheese, jalapeño slices, and red onion

6. Top with remaining bread slices, buttered side out

7. Heat panini press or heavy skillet over medium heat

8. Cook panini for 3-4 minutes per side until golden brown and cheese melts

9. Let cool for 2 minutes before slicing diagonally

10. Serve immediately with your favorite sides
