Ingredients

2 tbsp apple cider vinegar
1 tbsp Dijon mustard
2 tsp smoked paprika
1 tsp garlic powder

2 tsp kosher salt
1 tsp black pepper
Apple wood chips for smoking
Instructions
1. Score pork belly skin in crosshatch pattern
2. Season generously with salt, pepper, and spices
